Keşkek Recipe – A Traditional Anatolian Dish
Poached eggs served on creamy garlic yogurt, drizzled with melted butter and paprika – a classic Turkish breakfas
Keşkek is one of the most traditional and beloved dishes of Turkish cuisine. Made with wheat and meat that are slowly cooked together until they reach a soft, creamy consistency, keşkek has a special place in Anatolian food culture.
Traditionally served at weddings, religious celebrations, holidays, and large family gatherings, keşkek is much more than a simple meal. It is a dish that represents hospitality, community, and the rich culinary heritage of Anatolia.
What Is Keşkek?
Keşkek is a traditional Turkish dish prepared primarily with cracked wheat or wheat and meat, usually lamb or chicken. The ingredients are cooked slowly for a long time and then mixed until the meat and wheat become well combined.
Depending on the region of Türkiye, the recipe can vary. Some regions prepare keşkek with lamb, while others use chicken. The consistency and seasoning can also differ from one area to another.
The dish is commonly finished with a delicious butter and red pepper sauce, which is poured over the top before serving.
Ingredients for Traditional Keşkek
For the Keşkek
500 g wheat or hulled wheat
750 g lamb meat
1 onion
2 tablespoons butter
5–6 cups water or meat stock
Salt
For the Topping
2 tablespoons butter
1 teaspoon sweet or hot red pepper flakes
Optional: red pepper powder
How to Make Keşkek
1. Prepare the Wheat
Wash the wheat thoroughly and soak it in plenty of water overnight.
The next day, drain and rinse the wheat again.
Soaking the wheat helps it cook more easily and gives the finished dish a softer texture.
2. Cook the Meat
Place the lamb in a large pot and add enough water to cover it.
Cook over medium heat until the meat becomes very tender.
Once cooked, remove the meat from the pot and shred it into small pieces.
Keep the cooking liquid. The meat stock will add extra flavor to the keşkek.
3. Cook the Wheat
Melt the butter in a large pot.
Add the finely chopped onion and sauté lightly.
Add the soaked wheat and meat stock.
Cook over low heat until the wheat becomes very soft.
4. Add the Meat
Once the wheat is completely tender, add the shredded lamb.
Mix everything thoroughly with a wooden spoon.
Traditionally, the wheat and meat are mixed and beaten together until they become a thick, smooth and creamy mixture.
5. Prepare the Butter Sauce
Melt the butter in a small pan.
Add red pepper flakes or red pepper powder and cook for a few seconds.
Pour the hot butter sauce over the keşkek just before serving.
How Is Keşkek Served?
Keşkek is traditionally served hot, with the butter and red pepper sauce on top.
It can be enjoyed with:
Turkish pickles
Ayran
Seasonal salad
Fresh bread
It is especially popular as a main dish during large family gatherings and special occasions.
Regional Variations of Keşkek
One of the fascinating things about keşkek is that there is no single recipe used throughout Türkiye.
Different regions have their own versions.
In Aydın, keşkek is strongly associated with weddings and traditional celebrations and is commonly prepared with wheat and lamb.
In Uşak, keşkek is another important traditional dish and is typically prepared with wheat, lamb, meat stock and butter.
In some areas, chicken is used instead of lamb.
These regional differences are part of what makes Turkish cuisine so diverse. A keşkek recipe from western Türkiye may look quite different from one prepared in another part of Anatolia.
